Autumn Salad with Maple Dressing: So easy and SOOOO delicious!! Add a rotisserie chicken or grilled chicken for added protein.

Harvest Cobb Salad: I love this one because you can get your ingredients prepped ahead of time for a quick and healthy dinner.

Vegetarian

Warm Curry Roasted Vegetable Salad: The curry is so light and perfectly compliments the veggies in this dish. If you’re not a huge fan of curry, don’t fear, this is one I think everyone loves!

Low Carb Mushroom & Spinach Cauliflower Rice: This one reminds me so much of a healthy risotto. The mushrooms, garlic and onions give the dish a hearty flavor. I top mine with parmesan cheese for more of that risotto flavor!

Grossy’s Vodka Sawce: Now this is by no meals a “healthy” dish, BUT, it comes together quickly and is the BEST vodka sauce you will ever eat!!

Breakfast for Dinner

Cacio e Pepe Frittata with Lemony Yogurt and Arugula Salad: This comes together so quickly and has so much flavor.

Whole Wheat Pumpkin Pancakes with Pecans: Double the recipe and turn these into a sheet pan meal! Follow the cooking instructions here for sheet pan alternative.

Sheet Pan/One Pan

Lime Loaded Sheet Pan Shrimp Fajitas: It’s all in the marinade and that lime crema!! I know it’s a long list of ingredients, but it’s mainly spices. You have to try this one!

Big Mac Casserole: All the yummy goodness without the bun!

Chicken Romano Meatballs: These are lemony and delicious! I serve these on top of cauliflower rice.

Sloppy Joe Sheet Pan Totchos: Just like the sloppy joe’s you grew up with, but more fun to eat, nacho style!

Coconut Curry Chicken Crock Pot: This one is full-on curry, and it is delicious. I serve this over Jasmine rice and Naan on the side. For a lighter naan, I use this greek yogurt pizza dough recipe, cut into 4 equal parts, flatten and cook on the stove in a cast-iron skillet for that bubbly naan bread effect. 

Sweet Potato And Ground Beef Bowl: The flavors work so well together in this bowl, don't skimp on the sauce, it adds a fresh taste and ties it all together.

Swedish Meatballs: Do yourself a favor and double the sauce! Serve over egg noodles or cauliflower rice.

Slow Cooker Paleo Jalapeno Popper Chicken Chili: This chili is so yummy. Not spicy, just perfectly balanced.
